THE KITCHEN
Authentic Roman cuisine in Rome near the Vatican
A few dishes. Ingredients we know by name. The time they need.
The same hands, for years
Roman cooking doesn’t need shortcuts. It needs carefully selected ingredients, recipes we’ve known for years, and above all, the time to make them properly. This philosophy guides Taverna Lino’s work every day, bringing tradition to the table through simple, recognizable dishes deeply rooted in the local area. If you’re looking for authentic Roman cuisine in Rome near the Vatican, Taverna Lino offers a style of cooking that starts with the ingredients and respects the time they need. Our menu isn’t driven by a desire to offer dozens of different dishes, but by the wish to do a few things well. We choose our ingredients with the utmost care, our vegetables follow the market’s availability, some of Rome’s most iconic traditional dishes require long, slow cooking, and our desserts are made in-house. There are no complicated formulas: the ingredients, the seasons, and time determine the final result.
Pasta, just like it used to be
Pasta has a central place in the kitchen at Taverna Lino. We choose it carefully, working with trusted suppliers and quality ingredients that bring out the flavours of traditional Roman cuisine. Fettuccine, tonnarelli and the other shapes we serve are chosen to pair perfectly with their sauces and preserve the character of each dish. Our Thursday gnocchi also follow a long-standing Roman tradition, keeping alive a custom that is part of how we enjoy our meals. It’s not just the recipe that matters, but the quality of every ingredient: we select each one with care, because the ingredients make all the difference to the finished dish. For us, that means starting with reliable products, letting them shine without overcomplicating things, and letting the flavours speak for themselves. No shortcuts—just the simplicity and care that Roman cooking calls for.

The market sets the menu
Taverna Lino’s menu doesn’t stay the same throughout the year. The market determines many of the dishes we offer. Seasonality is an essential part of our cooking because it lets us use ingredients when they are at their best. Following the market means accepting that not everything needs to be available all year round. It’s a simple but deliberate choice, in keeping with an approach to cooking where the menu adapts to the ingredients, not the other way around. It’s a core principle of our Roman cuisine in Rome near the Vatican, which aims to preserve the authentic character of its recipes, without complicating dishes whose strength lies in the quality of their ingredients.
Oxtail, roast lamb, meatballs and dessert
Alongside pasta, we serve traditional main courses, often prepared slowly and patiently. Oxtail, roast lamb, and meatballs are part of a style of cooking where time is an ingredient in its own right. These recipes call for care, long cooking times, and the ability to wait. One of the best-known examples is oxtail alla vaccinara. This patience is one of the defining features of the Roman cuisine at Taverna Lino, near the Vatican in Rome. To complete the meal, we serve desserts prepared with the same care and simplicity that define the Taverna’s menu. From tiramisù to crostata, our desserts honor tradition and, where possible, are also available gluten-free.
